A recipe for Vegetable Pakora Golden Potato and Onion Bites:

Ingredients:

- 2 large potatoes, peeled and thinly sliced
- 1 large onion, thinly sliced
- 1 cup chickpea flour (besan)
- 2 tablespoons rice flour (optional, for extra crispiness)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Water, as needed
- Oil for frying

Instructions:

1. In a large mixing bowl, combine the chickpea flour, rice flour (if using), cumin seeds, coriander powder, turmeric powder, red chili powder, and salt.
2. Gradually add water to the mixture while whisking, until you have a smooth batter with a thick consistency. The batter should coat the back of a spoon but still be pourable.
3. Add the sliced potatoes and onions to the batter. Mix until all the vegetables are evenly coated.
4. Heat oil in a deep frying pan or kadhai over medium-high heat.
5. Once the oil is hot, carefully drop spoonfuls of the vegetable batter into the hot oil. You can use your hands or a spoon to do this.
6. Fry the pakoras in batches, making sure not to overcrowd the pan. Fry until they turn golden brown and crispy, flipping them occasionally for even cooking. This will take about 3-4 minutes per batch.
7. Once the pakoras are cooked to a golden brown color, remove them from the oil using a slotted spoon and drain them on paper towels to remove excess oil.
