Curry (Salan) Kadhi or Karhi Pakora Recipe - Traditional Flavour, in Ramzan 2024

Here's a recipe for Kadhi Pakora, a traditional Indian dish:

Ingredients:

For Pakoras:

- 1 cup gram flour (besan)
- 1 small onion, finely chopped
- 1 small potato, peeled and grated
- 1 green chili, finely chopped (optional)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt to taste
- Water, as needed
- Oil for frying

For Kadhi:

- 1 cup yogurt, whisked until smooth
- 2 tablespoons gram flour (besan)
- 1 tablespoon oil or ghee
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/4 teaspoon fenugreek seeds
- 1 dried red chili
- 8-10 curry leaves
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 2 cups water
- Salt to taste
- Fresh cilantro leaves for garnish

Instructions:

For Pakoras:

1. In a mixing bowl, combine gram flour, chopped onion, grated potato, chopped green chili (if using), cumin seeds, turmeric powder, red chili powder, and salt.
2. Gradually add water to the mixture and whisk until you have a thick batter consistency.
3. Heat oil in a deep frying pan over medium heat.
4. Drop spoonfuls of the pakora batter into the hot oil and fry until golden brown and crispy. Remove from oil and set aside on paper towels to drain excess oil.

For Kadhi:

1. In a bowl, whisk together yogurt and gram flour until smooth. Set aside.
2. Heat oil or ghee in a large saucepan over medium heat. Add cumin seeds, mustard seeds, fenugreek seeds, dried red chili, and curry leaves. Saute for a minute until the seeds start to crackle.
3. Lower the heat and add turmeric powder and red chili powder. Stir for a few seconds. 4. Pour the yogurt and gram flour mixture into the pan, stirring continuously to prevent lumps from forming.
5. Add water gradually while stirring to achieve the desired consistency. Bring the mixture to a gentle boil.
6. Season with salt to taste and simmer the kadhi for about 15-20 minutes, stirring occasionally, until it thickens slightly.
7. Add the fried pakoras to the kadhi and simmer for another 5 minutes.
8. Garnish with fresh cilantro leaves before serving.
Serve hot Kadhi Pakora with steamed rice or chapati for a comforting and delicious meal!
