Pakora ( Best and Delicious Indian Vegetable Fritters) Recipeis 2024

To make vegetable fritters irresistible … make Pakora!! These are Indian vegetable patties, spiced and fried until golden and crispy. They can be made with virtually any vegetable, so use this pakora recipe as a springboard to do your own variations.

Pakora, which are Indian Vegetable Fritters:

Ingredients:

- 1 cup chickpea flour (besan)
- 1 medium-sized potato, peeled and thinly sliced
- 1 medium-sized onion, thinly sliced
- 1 cup mixed vegetables (such as cauliflower florets, spinach leaves, or sliced bell peppers)
- 2 green chilies, finely chopped (optional)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Water, as needed
- Oil for frying

Instructions:

1. In a large mixing bowl, combine the chickpea flour, cumin seeds, coriander powder, turmeric powder, red chili powder, and salt.
2. Gradually add water to the mixture while whisking, until you have a smooth batter with a thick consistency. The batter should coat the back of a spoon but still be pourable.
3. Add the sliced potatoes, onions, mixed vegetables, and green chilies to the batter. Mix until all the vegetables are evenly coated.
4. Heat oil in a deep frying pan or kadhai over medium-high heat.
5. Once the oil is hot, carefully drop spoonfuls of the vegetable batter into the hot oil. You can use your hands or a spoon to do this.
6. Fry the pakoras in batches, making sure not to overcrowd the pan. Fry until they turn golden brown and crispy, flipping them occasionally for even cooking. This will take about 3-4 minutes per batch.
7. Once the pakoras are cooked to a golden brown color, remove them from the oil using a slotted spoon and drain them on paper towels to remove excess oil.
8. Serve the pakoras hot with your favorite dipping sauce, such as mint chutney or tamarind chutney.
