Delicious Lentil Soup Recipie 2024

A recipe for Lentil Soup:

Ingredients:

- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 cup dried lentils (green or brown), rinsed and drained
- 6 cups vegetable or chicken broth
- 1 (14-ounce) can diced tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Juice of 1 lemon
- Chopped fresh parsley for garnish (optional)

Instructions:

1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
2. Add the minced garlic to the pot and cook for an additional minute until fragrant.
3. Stir in the dried lentils, vegetable or chicken broth, diced tomatoes (with their juices), ground cumin, ground coriander, smoked paprika,
salt, and pepper.
4. Bring the soup to a simmer, then reduce the heat to low. Let the soup simmer, partially covered, for about 25-30 minutes, or until the lentils
are tender.
5. Once the lentils are tender, stir in the lemon juice. Taste and adjust seasoning if necessary.
6. If you prefer a smoother texture, you can use an immersion blender to partially blend the soup, or transfer a portion of the soup to a blender
and blend until smooth, then return it to the pot.
7. Ladle the lentil soup into bowls and garnish with chopped fresh parsley if desired.
8. Serve hot and enjoy this hearty and nutritious lentil soup!
