Ingredients: - 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 yellow squash, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1 (14-ounce) can diced tomatoes
- 6 cups vegetable broth
- 1 cup small pasta (such as ditalini or elbow)
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 cup chopped fresh spinach or kale
- Grated Parmesan cheese for garnish (optional)

Instructions:

1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, carrots, and celery. Cook, stirring occasionally, until
the vegetables are softened, about 5-7 minutes.
2. Add the minced garlic to the pot and cook for an additional minute until fragrant.
3. Stir in the diced zucchini, yellow squash, dried oregano, dried basil, dried thyme, salt, and pepper. Cook for another 2-3 minutes.
4. Pour in the diced tomatoes with their juices and vegetable broth. Stir well to combine.
5. Bring the soup to a simmer, then reduce the heat to low. Let the soup simmer for about 15-20 minutes, allowing the flavors to meld together.
6. Meanwhile, cook the pasta according to the package instructions in a separate pot. Drain and set aside.
7. Add the cooked pasta, kidney beans, and chopped spinach or kale to the pot of soup. Stir well and let the soup simmer for an additional 5-10
minutes until heated through and the greens are wilted.
8. Taste and adjust seasoning if necessary.
9. Ladle the minestrone soup into bowls and garnish with grated Parmesan cheese if desired.
