Ingredients: - 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 (14-ounce) cans diced tomatoes
- 1 (28-ounce) can whole peeled tomatoes
- 1 teaspoon sugar
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and pepper to taste
- 2 cups vegetable or chicken broth
- 1/2 cup heavy cream
- 1/4 cup chopped fresh basil leaves
- Grated Parmesan cheese for garnish (optional)

Instructions:

1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
2. Add the minced garlic to the pot and cook for another minute until fragrant.
3. Pour in the diced tomatoes and their juices, along with the whole peeled tomatoes. Break up the whole tomatoes with a spoon or spatula.
4. Stir in the sugar, dried oregano, dried basil, crushed red pepper flakes (if using), salt, and pepper. Cook the mixture for about 10 minutes,
stirring occasionally.
5. Add the vegetable or chicken broth to the pot and stir to combine. Bring the soup to a simmer, then reduce the heat to low. Let the soup simmer
for about 15-20 minutes to allow the flavors to meld.
6. Using an immersion blender or regular blender, puree the soup until smooth. Be careful when blending hot liquids.
7. Return the soup to the pot if using a regular blender, then stir in the heavy cream and chopped fresh basil. Heat the soup gently until warmed
through.
8. Taste and adjust seasoning if necessary.
9. Ladle the creamy tomato basil soup into bowls and garnish with grated Parmesan cheese and additional fresh basil leaves if desired.
10. Serve hot and enjoy this comforting and flavorful creamy tomato basil soup!
