Ingredients:

- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded or diced
- 2 cups uncooked egg noodles
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)

Instructions:

1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and sliced celery. Cook, stirring
occasionally, until the vegetables are softened, about 5-7 minutes.
2. Add the minced garlic to the pot and cook for an additional 1-2 minutes, until fragrant.
3. Pour in the chicken broth and add the shredded or diced chicken, uncooked egg noodles, dried thyme, and bay leaf. Stir well to combine.
4. Bring the soup to a simmer, then reduce the heat to low. Cover and let the soup simmer gently for about 15-20 minutes, or until the vegetables
are tender and the noodles are cooked through.
5. Season the soup with salt and pepper to taste, adjusting as needed.
6. Once the soup is ready, remove the bay leaf. Taste and adjust seasoning if necessary.
7. Ladle the chicken noodle soup into bowls and garnish with chopped fresh parsley if desired.
