Ingredients:

For Cajun Spiced Catfish:

- 4 catfish fillets (about 6 ounces each)
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- Salt and pepper to taste

For Remoulade Sauce:

- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons chopped pickles or relish
- 1 tablespoon chopped capers
- 1 tablespoon lemon juice
- 1 teaspoon Worcestershire sauce
- 1 teaspoon hot sauce (adjust to taste)
- 1 clove garlic, minced
- Salt and pepper to taste

Instructions:

1. Preheat your grill or oven to medium-high heat.
2. Pat dry the catfish fillets with paper towels to remove any excess moisture.
3. In a small bowl, mix together the Cajun seasoning, olive oil, salt, and pepper. Rub the mixture evenly over both sides of the catfish fillets.
4. If grilling: Place the catfish fillets directly on the grill grates and cook for about 4-5 minutes per side, or until the fish is cooked
through and flakes easily with a fork. If baking: Place the seasoned catfish fillets on a baking sheet lined with parchment paper and bake in the
preheated oven for about 12-15 minutes, or until cooked through.
5. While the catfish is cooking, prepare the remoulade sauce. In a small bowl, mix together the mayonnaise, Dijon mustard, chopped pickles or
relish, capers, lemon juice, Worcestershire sauce, hot sauce, minced garlic, salt, and pepper. Stir until well combined. Taste and adjust
seasoning as needed.
6. Once the catfish is cooked, remove it from the grill or oven and let it rest for a few minutes.
7. Serve the Cajun spiced catfish hot, topped with a generous spoonful of remoulade sauce on each fillet. You can also serve additional sauce on
the side for dipping. Enjoy your flavorful Cajun meal!
