Ingredients:

- 4 pieces of black cod fillets (about 6 ounces each)
- 1/4 cup white miso paste
- 1/4 cup mirin (Japanese sweet rice wine)
- 2 tablespoons sake
- 2 tablespoons brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 1 teaspoon sesame oil
- 1 green onion, thinly sliced (for garnish)
- Toasted sesame seeds (for garnish)

Instructions:

1. In a small saucepan, combine the white miso paste, mirin, sake, brown sugar, soy sauce, rice vinegar, grated ginger, and sesame oil. Stir well to combine.
2. Place the saucepan over medium heat and cook the mixture, stirring constantly, until the sugar has dissolved and the sauce is smooth. Remove from heat and let the miso glaze cool to room temperature.
3. Place the black cod fillets in a shallow dish or a resealable plastic bag. Pour the cooled miso glaze over the fillets, making sure they are evenly coated. Marinate the fish in the glaze for at least 30 minutes, or up to 2 hours in the refrigerator.
4. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with oil.
5. Remove the marinated black cod fillets from the refrigerator and place them on the prepared baking sheet. Spoon any remaining miso glaze over the top of the fillets.
6. Bake the black cod in the preheated oven for about 12-15 minutes, or until the fish is opaque and flakes easily with a fork. Be careful not to overcook the fish, as it can become dry.
